Crispy Edamame


This recipe is so easy to make and the fact that's it healthy makes it even better! I normally make this an hour or two before dinner, sort of as an appetizer, or just as a snack! I have heard of some people eating these instead of popcorn during a movie! And I know why, they are that good! This is a healthy snack everyone will love! 



Ingredients:
1 (12 ounce) package shelled edamame
1 tablespoon olive oil
1/4 cup grated Parmesan cheese (the powder kind)
Salt and pepper, to taste



Directions:

Preheat the oven to 400 degrees, rinse edamame under cool water to thaw and drain.

Spread the beans onto a baking sheet, drizzle with the olive oil. Then, sprinkle the cheese on top and season with salt and pepper.

Bake until the cheese is crispy and golden, about 15 minutes.

    1. Refrigerate them! If we ever have any leftover (which is rare), I end up giving them to my daughter at snack time.. she loves them!
